The Ecosystem event is a part of a new dinner series by Wild Swan at Mandoon, focusing on different ecosystems around Australia, harnessing the best produce and exploring the diversity of flavours to be found in our natural environment. 

The first of this series explores the Australian bush ecosystem with delicacies including emu, kangaroo.
